This sublime dish requires neither a starter nor a main course to follow because it is a meal in itself.
Although the title of this stew highlights the eggs, the essence and secret of the dish is in the three important pork products: ham, chorizo and black pudding.
Ingredients: two fried eggs, a slice of ham, two pieces of black pudding, a spicy chorizo sausage and farmhouse breadcrumbs. To accompany this try a handful of house olives, split one by one with a wooden mallet, softened for several days and flavoured with garlic, bay leaf, vinegar, salt, orange peel, black pepper and oregano.
The ham is not fried at the time the dish is prepared; it is fried earlier and kept in an earthenware jar for several hours with pork fat and a large handful of whole garlic cloves. To serve the ham, it only needs to be warmed up.
