Explanation

This recipe is similar to the porra, zoque and souco. However, this recipe uses ingredients that makes it one of the area's most distinctive, unique dishes. You can find it at the Hotel Andalucía Plaza in Marbella.

Step by step

1. Peel the tomatoes, and put the pieces in a large container.2. Incorporate the bread, mixing it well with your hands, so that it is soaked in the tomato juice.3. Add the garlic cloves, a pinch of salt to taste and a "chorreón" of vinegar. Crush the ingredients with a mixer.4. When you have a homogeneous mixture, continue beating at the same time as olive oil is added in the form of a thread little by little to emulsify our souk.5. Once done, keep it in the fridge, so it gets cold.

Serve accompanied by grapes and pitted olives.
