Known as "the caviar chef", this gastronomic investigator has been awarded the prestigious Michelin Star and a Repsol Sol. His cuisine is based on the careful selection of raw ingredients in constant awareness of the environment and of aquaculture. Caviar is the starring product at Sollo Restaurante, and they organize tastings of their three caviars from Riofrío: Russian, Iranian and Ecological, paired with an exclusive cava.
Sollo Restaurante offers the opportunity to visit their facilities and experience a tasting of caviar and cava. During the summer months, there are guided visits to their fish farm in Riofrío (by appointment).
