On 5 February, the town of Ardales in Malaga celebrates the Fiesta de la Matanza, a day that commemorates the traditional preparation of embutidos - sausages, and all things porky. The well-known saying: 'del cerdo se aprovecha todo', every part of a pig is used, couldn't be truer at this event. On this day, you'll see how chacinas, a type of pork sausage, was traditionally made, as well as other meaty products.
