Ajoblanco is probably the best-known cold soup along the entire Costa del Sol, although it is specific to Axarquía. There are many festivals held in its honour. This healthy dish mixes perfectly the sweetness of the grape, with the bitterness of the almond - the ideal combination. People serve ajoblanco during the summer as a refreshing dish that's known for helping boost one's energy.

Ingredients

  • 200 gr of raw almonds
  • 2 garlic cloves
  • 150 gr of breadcrumbs
  • 100 ml of extra virgin olive oil
  • 30 ml of vinegar
  • Pinch of salt (to taste)
  • 1 litre of water
  • Muscat grapes

Step by step

1. Soak the bread into cold water so that the crumb softens. Remove the crust and set aside.

2. Boil a little water and, once hot, add the almonds. Once soaked for a few minutes, start to remove the skin.

3. In a mortar, mash the peeled almonds together with the garlic cloves and a pinch of salt.

4. Add the soaked bread and make a dough, then add the extra virgin oil.

5. To finish off, add the vinegar and the water
