Bienmesabe

Share

The Bienmesabe de Antequera is a straightforward recipe to prepare for a perfect after-dinner treat. This traditional dessert has many varieties, but this recipe is a more standard version from Antequera. Don’t confuse this dessert with the Cádiz Bienmesabe, which are small pieces of marinated, fried fish served at its beachfront bars and restaurants.

Step by step

1. Lay a layer of citron syrup on a tray, and place a layer of savoy biscuits on top. Then cover them with another layer of syrup.

2. In the meantime, prepare a clear syrup with the sugar.

3. Make a dough with the ground almonds, add nine eggs and the remaining three yolks very well beaten. Heat it all for a few minutes.

4. Then, put everything in a bowl with a layer of ground cinnamon on top and let it rest for a day or two.

5. You can decorate it with some icing sugar. You'll love it!
