Migas (Crumbs)

Migas is the most popular, traditional winter dish from the Malaga inland. It’s a dish with simple ingredients yet full of flavour through adding in Iberian cured meats. What’s the secret? Stir, stir and stir until the breadcrumbs break apart.

  • Stale bread
  • Olive oil
  • Garlic
  • Salt
  • 200 gr of chorizo
  • 200 gr of bacon
  • Water

Explanation

Migas is the most popular, traditional winter dish from the Malaga inland. It’s a dish with simple ingredients yet full of flavour through adding in Iberian cured meats. What’s the secret? Stir, stir and stir until the breadcrumbs break apart.

Step by step

1. Cut the bread into slices and soak for a couple of minutes. Then drain it and let it rest for a couple of hours.

2. Cover the bottom of a large frying pan with olive oil and heat it. Once hot, add the chopped garlic, chorizo and bacon and brown them. Set aside.

3. Stir the breadcrumbs for an hour or so to prevent sticking. When the crumbs are loose and not too deeply fried, add the garlic, chorizo and the bacon you already pan-fried

4. After a few minutes, remove the pan from the heat and cover the crumbs with a cloth.

There are no limits when it comes to enjoying them. Sweet or salty, with fried eggs or oranges, grapes or olives; mix it and taste it!
