Step by step

1. Clean and salt the fish.2. Heat in a pan with a generous amount of extra virgin olive oil. 3. Flour the fish and fry it in small quantities, always with scalding oil so that the flour does not come off.4. Once fried, remove the fish and place it on a piece of kitchen paper to absorb the extra oil.5. Serve by adding a bit of squeezed lemon juice on top!
